Ingredients

  • 200g pork tenderloin, cubed
  • 2 cups mixed salad leaves (~60g)
  • ½ cup cucumber, diced (~60g)
  • ¼ cup red onion, sliced (~30g)
  • ½ cup cherry tomatoes, halved (~75g)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and black pepper, to taste

Yoghurt Dressing:

  • 150g Greek yogurt (low-fat)
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper, to taste

Preparation

  1. Marinate the pork: In a bowl, combine 1 tbsp olive oil, 1 tbsp lemon juice, 2 minced garlic cloves, 1 tsp dried oregano, salt, and pepper. Add the pork cubes and toss to coat. Marinate for at least 15 minutes (or overnight in the fridge).
  2. Make the yogurt dressing: In a small bowl, whisk together the Greek yogurt, 1 tbsp lemon juice, 1 minced garlic clove, and fresh dill. Season with salt and pepper. Refrigerate until needed.
  3. Thread the skewers: If using wooden skewers, soak them in water for 30 minutes. Thread the marinated pork cubes onto skewers.
  4. Cook the pork: Heat a grill pan or barbecue over medium-high heat. Cook the pork skewers for 3–4 minutes per side until golden and cooked through (internal temp should reach 63°C/145°F). Let rest for 2 minutes.
  5. Assemble the salad: Arrange the mixed salad leaves on plates. Top with cucumber, red onion, and cherry tomatoes.
  6. Serve: Place the pork skewers on top of the salad. Drizzle with the yogurt dressing and serve immediately.
