Ingredients
- 200g lean stew meat (beef, lamb, or chicken)
- 1 cup chopped root vegetables (carrot, parsnip, turnip – ~150g)
- ½ cup chopped onion (60g)
- 1 garlic clove, minced
- 1 tsp olive oil
- 100ml low-sodium beef or vegetable stock
- 1 tsp fresh thyme or rosemary
- Salt and black pepper to taste
Cheddar & Parsley Mash:
- 150g boiled potatoes
- 25g reduced-fat cheddar cheese, grated
- 1 tbsp fresh parsley, chopped
- 1 tsp unsalted butter (optional)
- Black pepper, to taste
Preparation
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add stew meat and brown on all sides.
- Add root vegetables, stock, and herbs. Simmer for 25–30 minutes until meat is tender.
- For mash, boil potatoes until soft, then mash with cheddar, parsley, and butter (if using).
- Serve stew hot with a portion of cheddar & parsley mash.
