Standard Portion

Ingredients
- ½ cup cooked lentils (100g)
- 1 cup mixed non-starchy vegetables (150g)
- 1 tsp olive oil
- 1 garlic clove
- ¼ small onion (30g)
- 1½–2 cups low-sodium vegetable broth
- Spices: turmeric, cumin, paprika
- Fresh coriander or parsley
Preparation
- Heat olive oil in a pot over medium heat.
- Sauté onion and garlic until fragrant.
- Add mixed vegetables and cook for 3–4 minutes.
- Add lentils, broth, and spices (turmeric, cumin, paprika).
- Bring to a boil, then reduce heat and simmer for 25–30 minutes.
