Standard Portion

Ingredients

  • ½ cup cooked lentils (100g)
  • 1 cup mixed non-starchy vegetables (150g)
  • 1 tsp olive oil
  • 1 garlic clove
  • ¼ small onion (30g)
  • 1½–2 cups low-sodium vegetable broth
  • Spices: turmeric, cumin, paprika
  • Fresh coriander or parsley

Preparation

  1. Heat olive oil in a pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. Add mixed vegetables and cook for 3–4 minutes.
  4. Add lentils, broth, and spices (turmeric, cumin, paprika).
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
